2 cups old fashioned oats (choose gluten free oats if desired)
¾ cup chopped walnuts
½ cup unsweetened shredded coconut
¾ teaspoon nutmeg
Pinch of salt
⅓ cup pure maple syrup
¼ cup coconut oil
2 teaspoon pure vanilla extract
Instructions
Preheat the oven to 300. Line a cookie sheet with parchment paper and set aside.
I’m a medium sized bowl, combine the oats, walnuts, coconut, cinnamon, nutmeg, and salt. Whisk to combine.
In a small bowl, combine maple syrup and coconut oil. Microwave on high for 30 seconds, or until oil is melted. Add vanilla and whisk to combine.
Pour over oat mixture and mix until throughout coated. Using a spatula, spread in a thin layer onto parchment lined cookie sheet.
Bake at 325 degrees for 40 minutes, flipping granola hallway through. All to cool completely on cookie sheet. Store in an airtight container at room temperature for about a month. Enjoy!
