Oreo Brookie Bars

With perfect chocolate chip cookies, luscious brownies, and both chocolate + golden Oreos, these Oreo Brookie Bars are truly a decadent dessert dream.

Ingredients

For the Cookie Layer:

  • 1 Cup (226g) Salted Butter, softened to room temperature
  • ¾ Cup (150g) Brown Sugar of Choice, packed
  • ½ Cup (100g) Granulated Sugar
  • 2 Large Eggs + 1 large Egg Yolk
  • 1 Tablespoon (15ml) Pure Vanilla Extract
  • 1 Teaspoon (6g) Baking Soda
  • 1 Teaspoon (6g) Baking Powder
  • 1 Teaspoon (6g) Salt
  • 2 ¾ Cups (245g) All-Purpose Flour
  • 2 Cups (240g) Chocolate Chips of Choice (I used milk and semisweet)

For the Brownie Layer:

  • 1 Cup (226g) Salted Butter
  • ¾ Cup (130g) Chocolate Chips of Choice (I used semisweet)
  • 1 ¼ Cups (250g) Granulated Sugar
  • 2 Large Eggs
  • 2 Teaspoons (30ml) Pure Vanilla Extract
  • ¾ Cup (95g) All Purpose Flour
  • ¾ Cup (65g) Unsweetened Cocoa Powder
  • ½ Teaspoon (3g) Salt

For the Oreo Layers:

  • 20 Golden Oreos and 20 Chocolate Oreos (regular or double stuffed)

Instructions

  • Preparation:
    Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  • For the Cookie Layer:
    In a large mixing bowl, cream together softened salted butter, brown sugar, and granulated sugar until light and fluffy.
    Beat in eggs and egg yolk, one at a time, followed by pure vanilla extract.In a separate bowl, whisk together baking soda, baking powder, salt, and all-purpose flour.
    Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    Fold in chocolate chips until evenly distributed throughout the dough.
    Press about ⅔ of the cookie dough evenly into the bottom of the prepared baking pan. Layer 15 golden Oreos over the cookie dough and press down gently. 
  • For the Brownie Layer:
    In a microwave-safe bowl, melt salted butter and semisweet chocolate chips together until smooth.
    Stir in granulated sugar until well combined.Beat in eggs, one at a time, followed by pure vanilla extract.
    In a separate bowl, sift together all-purpose flour, unsweetened cocoa powder, and salt.
    Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    Fold in chocolate chips until evenly distributed throughout the batter.
    Pour about ⅔ of the the brownie batter over the cookie dough / golden Oreo layer in the baking pan, spreading it out evenly.
    Layer 15 Chocolate Oreos over the brownie mix, pressing down gently if needed. 
  • Assembling the Final Layers: 
    Crumble the remaining cookie dough on top of the Chocolate Oreo layer, and then pour the remaining brownie batter around it, leaving portions of cookie dough exposed.
    Crumble 5 Golden Oreos and 5 Chocolate Oreos and sprinkle those on top, gently pressing down. 
  • Baking:
    Bake the Oreo brookie bars in the preheated oven for 40-45 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs.
    Alternatively, if you want a bar that insist quite so thick, use a 9x13” pan and bake for 30-35 minutes. 
  • Allow the bars to cool completely in the baking pan on a wire rack before slicing and serving. If you cut them prematurely they will be delicious but they will absolutely fall apart! Once cooled, use the parchment paper overhang to lift the bars out of the pan and onto a cutting board.Slice into squares or rectangles, and enjoy!
  • These Oreo Brookie Bars are best stored in an airtight container at room temperature for up to 3-4 days.
