No-Bake Caramel Apple Cheesecake

This No-Bake Caramel Apple Cheesecake is comprised of golden Oreos, no-bake vanilla bean cheesecake, apple pie filling, and homemade caramel sauce.

Ingredients

For the Crust:

  • 30 Golden Oreos
  • Cup Salted Butter, softened to room temperature

For the Filling:

  • 24 Ounces Cream Cheese, softened to room temperature
  • 2 Cups Granulated Sugar
  • 1 Teaspoon Ground Cinnamon
  • 1 Teaspoon Vanilla Bean Paste (or the seeds from one vanilla bean)
  • 1 Cup Heavy Cream, whipped to stiff peaks
  • 2 21-Ounce Cans of Apple Pie Filling
  • Cup Caramel Sauce (recipe link in blog)

Toppings:

  • Crushed Golden Oreos + Extra Caramel Sauce

Instructions

  • Prepare the Crust:
    Crush the 30 Golden Oreos into fine crumbs. You can use a food processor or place them in a sealed plastic bag and crush them with a rolling pin.
    Transfer the Oreo crumbs to a mixing bowl and stir in the melted salted butter until well combined.
    Press the mixture firmly into the bottom of a parchment lined 8 inch springform pan.
    Ensure the crust is evenly distributed and compacted. Place it in the refrigerator while you prepare the filling.
  • Make the Filling:
    In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
    Gradually add the granulated sugar, ground cinnamon, and vanilla bean paste. Mix until fully incorporated and smooth.In a separate bowl, whip the heavy cream until stiff peaks form.
    Gently fold the whipped cream into the cream cheese mixture until well combined and fluffy.
  • Assemble the Cheesecake:
    Remove the prepared crust from the refrigerator. Spread half of the cream cheese filling evenly over the crust.
    Spoon half of the apple pie filling over the cream cheese layer, spreading it out evenly.
    Drizzle half of the caramel sauce over the apple pie filling.
  • Repeat Layers:Repeat the layers with the remaining half of the cream cheese filling, apple pie filling, and caramel sauce.
  • Chill and Serve: 
    Refrigerate for at least 4 hours, or until the cheesecake is set.
    If desired, sprinkle some crushed Golden Oreos + a final drizzle of caramel over the top for extra texture and flavor prior to serving. Once chilled, slice.
    Serve chilled and enjoy!
