Oreo Brookie Bars
Ingredients:
For the Cookie Layer:
- 1 cup (226g) Salted Butter, softened to room temperature
- ¾ cup (150g) Brown Sugar of Choice, packed
- ½ cup (100g) Granulated Sugar
- 2 Large Eggs + 1 Large Egg Yolk
- 1 tablespoon Pure Vanilla Extract
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1 teaspoon Salt
- 2 ¾ cups (345g) All-Purpose Flour
- 2 cups (340g) Chocolate Chips of Choice
For the Brownie Layer:
- 1 cup (226g) Salted Butter
- ¾ cup (130g) Semisweet Chocolate Chips or Chunks
- 1 ¼ cups (250g) Granulated Sugar
- 2 Large Eggs
- 2 teaspoons Pure Vanilla Extract or Pure Vanilla Bean Paste
- ¾ cup (95g) All-Purpose Flour
- ¾ cup (65g) Unsweetened Cocoa Powder
- ½ teaspoon Salt
- 1 cup (170g) Chocolate Chips of Choice
Oreo Layers:
- Chocolate Oreos and Golden Oreos (20 of each flavor)
Preparation:
- Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
For the Cookie Layer:
2. In a large mixing bowl, cream together softened salted butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs and egg yolk, one at a time, followed by pure vanilla extract.
- In a separate bowl, whisk together baking soda, baking powder, salt, and all-purpose flour.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in chocolate chips until evenly distributed throughout the dough.
- Press about ⅔ of the cookie dough evenly into the bottom of the prepared baking pan. Layer 16 golden Oreos over the cookie dough and press down gently.
For the Brownie Layer:
8. In a microwave-safe bowl, melt salted butter and semisweet chocolate chips together until smooth.
- Stir in granulated sugar until well combined.
- Beat in eggs, one at a time, followed by pure vanilla extract.
- In a separate bowl, sift together all-purpose flour, unsweetened cocoa powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in chocolate chips until evenly distributed throughout the batter.
- Pour about ⅔ of the brownie batter over the cookie dough / golden Oreo layer in the baking pan, spreading it out evenly. Layer 16 Chocolate Oreos over the brownie mix, pressing down gently if needed.
Assembling the Final Layers:
15. Crumble the remaining cookie dough on top of the Chocolate Oreo layer, and then pour the remaining brownie batter around it, leaving portions of cookie dough exposed. Crumble 5 Golden Oreos and 5 Chocolate Oreos and sprinkle those on top, gently pressing down.
Baking:
16. Bake the Oreo Brookie Bars in the preheated oven for 40-45 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs. These bars are quite thick and will take some time to set up.
- Alternatively, if you want a bar that isn't quite so thick, use a 9x13” pan and bake for 30-35 minutes.
- Allow the bars to cool completely in the baking pan on a wire rack before slicing and serving. If you cut them prematurely they will be delicious but they will absolutely fall apart!
- Once cooled, use the parchment paper overhang to lift the bars out of the pan and onto a cutting board.
- Slice into squares or rectangles, and enjoy!
Frequently Asked Questions:
Q: Can I use unsalted butter instead of salted butter?
A: Yes, you can substitute unsalted butter for salted butter in this recipe. Just add a pinch of salt to the dough to compensate for the absence of salt in the butter.
Q: Can I use different types of Oreos and fillings for this recipe?
A: Absolutely! Feel free to get creative with your Oreo choices, and mix-ins such as M&M's or your favorite nut. Experiment with different flavors like mint, peanut butter, or even limited-edition varieties to customize the bars to your taste preferences.
Q: Can I freeze these Oreo Brookie Bars for later?
A: Yes, these bars freeze well. Once cooled and sliced, individually wrap the bars in plastic wrap or place them in an airtight container, separating layers with parchment paper to prevent sticking. They can be frozen for up to three months. Just thaw them at room temperature before indulging.
Dietary Substitutions:
I love providing gluten and dairy free substitutions so that those with alternate dietary needs can enjoy my recipes to their fullest! These are subs that I have either used and continue to stock in my own home, or that have come highly recommended from others. I want your baking experience to be the best it can be, and avoiding gluten or dairy shouldn’t hinder that process in the slightest.
As always, here is a list of tried and true dietary substitutes, so that you can enjoy this recipe without the additions of gluten or dairy.
Bob’s Red Mill 1:1 Gluten Free Baking Flour is a wonderful all-purpose sub, and it’s cup for cup, so use the same measurements as you would all-purpose flour.
Miyokos butter is a plant based brick that closely resembles dairy butter not only in its look, but it’s taste as well. It melts, browns, and spreads just like real butter, and truly is a fantastic substitute in this recipe. Use it as a 1:1 ratio sub, same as the flour, so the recipe measurements will not change.
43% Oat Milk Chocolate + Coconut Sugar by Scharffenberger are dairy free + allergen friendly chocolate chunks and would work great in the brownies and the cookies.
Oreo makes Golden and Chocolate sandwich cookies that are gluten-free. They are already vegan so enjoy this substitute without both gluten and dairy!
