This gloriously easy and flavorful Brioche French Toast Bake is loaded with fresh blackberry jam, swirls of creme fraîche, and baked to golden perfection. It’s going to be your new favorite Sunday brunch centerpiece.
I love a good French Toast Bake. I also love a good Brioche. Put them together and you’ve got this Brioche French Toast Bake that is loaded with delicious blackberry jam and creme fraîche. In partnership with Petrossian NYC, this easy and incredibly flavorful bake will become a brunch or breakfast staple in your house for years to come.
What you will need to make this Brioche French Toast Bake:
Brioche bread (I love Trader Joe’s variety, but you can use any store bought or homemade brioche bread)
Salted butter
Large eggs
Half and half
Ground cinnamon
Ground nutmeg
Salt
Putting it All Together
You will start by generously buttering a 7” skillet or baking dish of a similar size. Then you will break the brioche into bite size pieces. There is no rhyme or reason here, and it doesn’t need to be perfect. 1-inch cubes are a good standard, as this allows the bake to soak up all the flavors and not have dry spots. Pour the brioche bites into the buttered skillet.
Next you will make the French toast egg base: this is simply the next six ingredients, and you’ll whisk those together well in a small bowl. You will pour this mixture over the brioche, ensuring that all the pieces are well covered in the mixture.
Next, you will scoop small spoonfuls of both the blackberry jam and creme fraîche onto the bake. You will swirl it around to ensure it is somewhat evenly distributed, but again, this is not an exact science. You can add more or less depending on flavor preferences as well. Once swirled, it is time to bake!
This French toast bake doesn’t take long in the oven; 25-30 minutes is all your need to have a piping hot, fresh from the oven, skillet French toast that is so creamy and so packed with flavor, it will wow pretty much anyone. Top with additional fresh berries, powdered sugar, warm maple syrup, or simply enjoy as is.

Brioche French Toast Bake
Ingredients
- 2 slices Brioche bread (medium to large slices)
- 1 tablespoon Salted butter
- 2 large eggs
- ½ cup Half and Half
- ¾ tsp Ground cinnamon
- ½ teaspoon Ground nutmeg
- 1 pinch Salt
- ¼ cup Petrossian blackberry jam
- ¼ cup Petrossian Creme Fraiche
Instructions
- Preheat oven to 350°. Greece a 7” or 8” skillet or baking dish with the salted butter. Cube the brioche bread and place in the baking dish.
- cinnamon, nutmeg, and salt. Whisk until fully combined, about 30 seconds. Pour egg mixture over the brioche cubes, ensuring that all pieces are covered.
- Drop tablespoons of blackberry jam and creme fraîche over the French toast, and swirl gently to combine. Do not overmix.
- Bake for 25-30 minutes, or until bubbly and golden brown on edges. Check at the 20 minute mark: If the top begins to brown too quickly, cover with foil for reminder of cooking time. Remove from oven and allow to cool slightly, about five minutes. Top with fresh berries, or powdered sugar and pure maple syrup. Enjoy!
