    Wholesome Vanilla Walnut Granola

    Vegan with a gluten free option, this homemade + wholesome vanilla walnut granola is naturally sweetened with pure maple syrup, and packs a flavor punch with coconut, cinnamon, and nutmeg.

    Granola is such a perfect topping for so many things. I love a bowl of Greek yogurt with that sweet crunch on top. Waffles are topped with granola and drizzled with syrup, and it can also simple be tossed back by the handfuls on a hike or camping trip. There’s no wrong way to enjoy this wholesome vanilla walnut granola, so grab a bowl and eat up!

    What you’ll need to make this wholesome vanilla walnut granola:

    Old fashioned rolled oats (choose gluten free to be safe from any cross contamination)

    Chopped walnuts

    Unsweetened shredded coconut

    Ground cinnamon

    Ground nutmeg

    Salt

    Pure maple syrup

    Coconut oil

    Pure vanilla extract

    Making Of + Substitutes and Additions

    To make this granola, you’ll start by mixing the dry ingredients in a bowl. Heat the syrup and coconut oil so that it melts together in one glorious concoction. Add the vanilla. Mix it all together, ensuring that the dry ingredients are well and evenly coated by the wet ones, and pour it onto the parchment lined pan. I baked mine for the full 40 minutes to ensure a nice crunch, so based on your oven temp, ensure that you keep an eye on it so it doesn’t get too crispy.

    Now it’s time to get creative! Add in any of your favorites: raisins, pecans, etc would be amazing in this recipe. Not a fan of shredded coconut? Omit it. Double the nuts. Really, just make it your own! Store it in an airtight glass jar and you can snack on it for upwards of a month or more.

    Wholesome Vanilla Walnut Granola

    Ingredients

    • 2 cups old fashioned oats (choose gluten free oats if desired)
    • ¾ cup chopped walnuts
    • ½ cup unsweetened shredded coconut
    • ¾ teaspoon nutmeg
    • Pinch of salt
    • ⅓ cup pure maple syrup
    • ¼ cup coconut oil
    • 2 teaspoon pure vanilla extract

    Instructions

    • Preheat the oven to 300. Line a cookie sheet with parchment paper and set aside. 
    • I’m a medium sized bowl, combine the oats, walnuts, coconut, cinnamon, nutmeg, and salt. Whisk to combine. 
    • In a small bowl, combine maple syrup and coconut oil. Microwave on high for 30 seconds, or until oil is melted. Add vanilla and whisk to combine. 
    • Pour over oat mixture and mix until throughout coated. Using a spatula, spread in a thin layer onto parchment lined cookie sheet.
    • Bake at 325 degrees for 40 minutes, flipping granola hallway through. All to cool completely on cookie sheet. Store in an airtight container at room temperature for about a month. Enjoy!
