18 Chocolate Chip Cookie Dippers, Trader Joe’s brand (you can substitute alternate chocolate chip cookies if you do not have / cannot find these)
Brown Sugar Mini Chip Mascarpone Cream Filling:
1 ½CupsHeavy Cream
⅓CupBrown Sugar of Choice, packed
1TeaspoonVanilla Bean Paste
6Ounces Mascarpone Cream, about ¾ cup
½CupMini Chocolate Chips of Choice (I used Semisweet)
For the Brown Sugar Espresso Whipped Cream:
1CupHeavy Cream
2TablespoonsBrown Sugar of Choice, packed
1TeaspoonVanilla Bean Paste
1TeaspoonEspresso Powder
For the Toppings:
¼CupMini Chocolate Chips
1Chocolate Chip Cookie Dipper, crushed to crumbs
Instructions
Brew 1 cup of espresso and let it cool slightly. In a shallow dish, pour the cooled espresso. Take half of the chocolate chip cookie dippers and dip them into the espresso, ensuring they are soaked but not too soggy. Layer the dipped cookies in the bottom of a dish, covering the entire surface.
For the Brown Sugar Mini Chip Mascarpone Cream Filling:In a mixing bowl, whip 1 ½ cups of heavy cream until soft peaks form.Add ⅓ cup packed brown sugar and 1 teaspoon vanilla bean paste, continue whipping until stiff peaks form.Gently fold in 6 ounces of mascarpone cheese and ½ cup mini chocolate chips. Spread half of the mascarpone cream mixture over the layer of cookies. Repeat the process with the remaining cookies and mascarpone cream.
For the Brown Sugar Espresso Whipped Cream:In a separate mixing bowl, whip 1 cup of heavy cream until soft peaks form.Add 2 tablespoons of brown sugar, 1 teaspoon vanilla bean paste, and 1 teaspoon espresso powder.Whip until stiff peaks form.
Pipe the espresso whipped cream over the top layer of mascarpone cream. Sprinkle ¼ cup of mini chocolate chips over the whipped cream. Optionally, crumble a chocolate chip cookie dipper and sprinkle it over the top for added texture.
Cover the dish with plastic wrap and chill in the refrigerator overnight to allow the flavors to meld. Serve chilled and enjoy your Chocolate Chip Cookie Tiramisu!
