    Spiced Gingerbread Waffles

    Waffles are basically THE ultimate comfort breakfast. They are warm + soft on the outside, and slightly crunchy on the exterior, creating a perfect palate of textures. And this spiced gingerbread waffle recipe? It is no exception. They pack texture AND flavor to the max, with cinnamon, nutmeg, cloves, and ginger … plus a touch of molasses. With butter, syrup, and a dusting of powdered sugar, they are the perfect Christmas breakfast. Bonus points for using a festive waffle iron with a cutie gingerbread man on it too. This Dash one was only $10 at Target, and makes perfectly round waffles in three minutes each. Cannot ask for much more than that on a lazy Saturday morning.

    Ok, so waffles. I personally don’t love my waffles super crunchy, because they feel too dry. Belgium waffles are the exception here. They are much thicker than a standard waffle, so they can get away with a crunchy exterior and not be overtly dry. Thinner waffle irons just can’t pull that off, in my opinion. There are also waffles that basically take on the texture of pancakes, and this Mickey waffle iron does that for me. They are soft and flavorful, a perfect meet-in-the-middle from pancakes to waffles.

    What you’ll need for these Spiced Gingerbread Waffle Recipe:

    All Purpose Flour (I love this Bob’s Red Mill flour)

    Baking Powder

    Granuated Sugar

    Salt

    Cinnamon

    Nutmeg

    Cloves

    Ginger

    Molasses

    Pure Vanilla Extract

    Large Eggs

    Salted Butter (I love this Kerrygold butter)

    Whole Milk (any milk would do in a pinch, and you can use any form of nut milk for a dairy-free option at a 1:1 ratio)

    This little gingerbread waffle iron makes a nice crust on the outside, but cook time definitely adds to that as well. I cooked each waffle for three minutes, and they were a nice medium golden brown, but still soft in the center. If you want less of golden color, you can test them at about 2/ 2.5 minutes and see what you think. There’s really no wrong way to make these, and the topping options are endless as well… anything from whipped cream to cinnamon to a fruit compote to toasted nuts would be divine. Get creative! And maybe make a waffle bar / platter as well. I’ve been dreaming up one of those for valentines already, so I’m sure you’ll see these little beauties pop up in chocolate or buttermilk form here very soon.

    Ingredients

    • 2 ¼ cup all purpose flour  1 tablespoon baking powder  ¼ cup granulated sugar  ½ teaspoon salt 1 teaspoon cinnamon  ½ teaspoon nutmeg  ¼ teaspoon cloves  ¼ teaspoon ginger  2 Teaspoon vanilla extract  2 large eggs  ½ cup salted butter, melted  1 ¾ cups whole milk 

    Instructions

    • Directions: heat waffle iron. 
    • Whisk flour, baking powder, sugar, salt, and spices in a medium bowl. 
    • Add eggs, melted butter, milk, and vanilla, and stir until combined. 
    • Butter or spray hot iron.
    • Using a measuring cup, spoon batter onto iron and cook until golden brown, repeating with remainder of batter. 
    • Top with butter, syrup, and powdered sugar. Enjoy!

    Notes

  • Notes: I have an Oster brand waffle iron that I use most of the time.  My iron takes about ¾ cup of batter per waffle and I cook each waffle 4- 4 ½ minutes. 
  • This little mini gingerbread waffle iron takes ¼ cup batter. I cooked these waffles for about 3 minutes each. 
  • This recipe is easily made gluten and / or dairy free. Simply sub a 1:1 gluten free flour for the all purpose, and vegan butter + non-dairy milk for regular butter and milk.
